What is Hakodate Ramen?

Hakodate Ramen is a local delicacy of Hakodate, Hokkaido. It is a salt ramen, known simply as “ramen” or “shina soba” in the area.
It consists of a clear, salty broth made from pork and chicken bones and a salty sauce, combined with soft, medium-thick, straight noodles. Ingredients are usually chashu pork, pickled bamboo shoots, green onions, spinach, fu, or naruto.

This ramen is commonly called shio ramen, and in the local area of Hakodate, Hokkaido, it is simply called ramen or shina soba.

In Hakodate, the word “ramen” refers to salt ramen. The clear, transparent soup and noodles with little shrinkage have not changed much since their original introduction from China. As an early port town, Hakodate was one of the first two places in Japan where ramen was introduced to Japan. While most ramen in Hokkaido is heavy and fatty to combat the cold, Hakodate’s ramen is refreshing, perhaps due to its mild climate.

The most distinctive feature of Hakodate’s delicious salt ramen is the clear, refreshing soup. While the soup is refreshing, there is a deep flavor hidden in it. It is no wonder that many people never get tired of tasting the soup, and finish every mouthful without getting bored.
