Originating in Ikebukuro, Tokyo, Authentic Chinese Noodle Shop Hikaromen is a popular ramen restaurant that is considered a representative of Tokyo tonkotsu (pork bone) ramen. The rich and creamy soup made by slowly simmering pork bones and chicken bones is unrivaled. In addition to ramen, the pork bone broth-based tsukemen (dipping noodles) are also popular.

The word “koumen” originally means “nothing” or “somen” in Guangzhou, China, and refers to “real noodles with nothing extra. Therefore, at “Authentic Chinese Noodle Shop Koumen,” we aim to live up to the origin of the word and make “real noodles” as our goal, and face ramen every day.

Oil soba. The quantity is large. Noodles are chewy and delicious. The ingredients are as shown in the picture.

Regular ramen. The soup has a rich aroma of seafood bonito broth and tonkotsu (pork bone broth). Ingredients include thick chashu pork, grilled green onion, boiled egg, bamboo shoots, garlic chips, and nori seaweed.

Koumen’s ramen is a Tokyo tonkotsu ramen with few peculiarities loved by men and women of all ages. When you drink the soup, the savory soy sauce flavor spreads in your mouth, and is a perfect match for the strong, firm, glutinous texture of the noodles. The soup has no peculiar peculiarities or odor characteristic of pork bones, so it has a rich and mellow flavor that anyone can easily enjoy.

Koumen’s signature pork bone broth has a mild and creamy flavor that has been slowly aged for 12 hours to bring out its full flavor and richness. The soy sauce flavor that spreads on the palate after drinking the soup whets the appetite.

I felt the noodles were a little low, but this is about right.
